Chocolate Cherry Swiss Roll Cake
1. Chocolate Sponge Cake (for the roll)
Ingredients
-
4 large eggs
-
100 g granulated sugar
-
1 tsp vanilla extract
-
80 g all-purpose flour
-
30 g cocoa powder
-
1 tsp baking powder
-
1/4 tsp salt
-
40 ml milk
-
40 ml vegetable oil
Instructions
-
Preheat oven to 180°C (350°F).
-
Line a 10x15 inch (25x38 cm) baking tray with parchment paper.
-
In a bowl, beat eggs and sugar with a mixer for 5–7 minutes until pale, thick, and fluffy.

Add vanilla extract, mix gently.

In another bowl, sift together:
-
flour
-
cocoa powder
-
baking powder
-
salt
-
-
Fold dry ingredients slowly into the egg mixture using a spatula.

Add milk and vegetable oil, fold gently until smooth.
-
Pour batter into prepared pan and spread evenly.
-
Bake 10–12 minutes until the cake springs back when touched.
Rolling the Cake

Place a clean towel on the table and dust lightly with cocoa powder.
-
Turn the hot cake onto the towel.
-
Remove parchment paper.
-
Roll the cake gently with the towel from the short side.
-
Let it cool completely while rolled.
2. Cherry Cream Filling
Ingredients
-
200 ml heavy whipping cream
-
2 tbsp powdered sugar
-
1 tsp vanilla extract
-
120 g cream cheese (optional but recommended)
-
120 g cherry jam or cherry compote
-
6–8 fresh cherries (chopped)
Instructions.

Beat heavy cream + powdered sugar + vanilla until soft peaks form.
-
In another bowl, soften cream cheese, then mix with the whipped cream.
-
Add cherry jam and chopped cherries and fold gently.
3. Chocolate Ganache (for topping)
Ingredients
-
200 g dark chocolate
-
150 ml heavy cream
-
1 tbsp butter
Instructions
-
Heat cream until just simmering (not boiling).
-
Pour over chopped chocolate.
-
Wait 2 minutes, then stir until smooth.
-
Add butter and mix until glossy.
4. Assembling the Cake
-
Carefully unroll the cooled sponge cake.
-
Spread cherry cream filling evenly over the cake.
-
Roll the cake tightly again into a Swiss roll.
-
Place in refrigerator 30 minutes to set.
-
Pour chocolate ganache over the top.
5. Decoration (like the picture)
Decorate with:
-
whipped cream piping
-
chocolate drizzle
-
fresh cherries on top
-
extra cherry syrup dripping from the center
Optional additions:
-
chocolate shavings
-
cocoa powder dust
✔ Chill 1 hour before serving for best texture.
