Chocolate Cherry Swiss Roll Cake 

1. Chocolate Sponge Cake (for the roll)

Ingredients

  • 4 large eggs

  • 100 g granulated sugar

  • 1 tsp vanilla extract

  • 80 g all-purpose flour

  • 30 g cocoa powder

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 40 ml milk

  • 40 ml vegetable oil

Instructions

  1. Preheat oven to 180°C (350°F).

  2. Line a 10x15 inch (25x38 cm) baking tray with parchment paper.

  3. In a bowl, beat eggs and sugar with a mixer for 5–7 minutes until pale, thick, and fluffy.

  4. Add vanilla extract, mix gently.

  5. In another bowl, sift together:

    • flour

    • cocoa powder

    • baking powder

    • salt

  6. Fold dry ingredients slowly into the egg mixture using a spatula.

  7. Add milk and vegetable oil, fold gently until smooth.

  8. Pour batter into prepared pan and spread evenly.

  9. Bake 10–12 minutes until the cake springs back when touched.

Rolling the Cake

  1. Place a clean towel on the table and dust lightly with cocoa powder.

  2. Turn the hot cake onto the towel.

  3. Remove parchment paper.

  4. Roll the cake gently with the towel from the short side.

  5. Let it cool completely while rolled.


2. Cherry Cream Filling

Ingredients

  • 200 ml heavy whipping cream

  • 2 tbsp powdered sugar

  • 1 tsp vanilla extract

  • 120 g cream cheese (optional but recommended)

  • 120 g cherry jam or cherry compote

  • 6–8 fresh cherries (chopped)

Instructions.

  1. Beat heavy cream + powdered sugar + vanilla until soft peaks form.

  2. In another bowl, soften cream cheese, then mix with the whipped cream.

  3. Add cherry jam and chopped cherries and fold gently.


3. Chocolate Ganache (for topping)

Ingredients

  • 200 g dark chocolate

  • 150 ml heavy cream

  • 1 tbsp butter

Instructions

  1. Heat cream until just simmering (not boiling).

  2. Pour over chopped chocolate.

  3. Wait 2 minutes, then stir until smooth.

  4. Add butter and mix until glossy.


4. Assembling the Cake

  1. Carefully unroll the cooled sponge cake.

  2. Spread cherry cream filling evenly over the cake.

  3. Roll the cake tightly again into a Swiss roll.

  4. Place in refrigerator 30 minutes to set.

  5. Pour chocolate ganache over the top.


5. Decoration (like the picture)

Decorate with:

  • whipped cream piping

  • chocolate drizzle

  • fresh cherries on top

  • extra cherry syrup dripping from the center

Optional additions:

  • chocolate shavings

  • cocoa powder dust


Chill 1 hour before serving for best texture.
