Ingredients
For the Blueberry Chia Yogurt

1 cup fresh or frozen blueberries

1 cup Greek yogurt (plain or vanilla)

2 tablespoons chia seeds

2 tablespoons honey or maple syrup

½ teaspoon vanilla extract
-
2–3 tablespoons milk (optional, to adjust thickness)
For the Granola Layer

1 cup granola (store-bought or homemade)
Toppings
-
½ cup fresh blueberries
-
¼ cup whipped cream or extra yogurt
-
2 tablespoons granola (for crunch)
-
Fresh mint leaves for garnish

Optional: drizzle of honey
Instructions

1. Make the Blueberry Chia Yogurt

Place blueberries in a blender.

Blend until smooth to make a blueberry puree.

In a bowl, combine:

Greek yogurt

Blueberry puree
-
Chia seeds
-
Honey or maple syrup
-
Vanilla extract
-

Mix well until fully combined.

Let the mixture sit for 10–15 minutes so the chia seeds thicken the yogurt.
2. Prepare the Glass

Spoon 3–4 tablespoons of granola into the bottom of a serving glass.

Add a layer of the blueberry chia yogurt mixture on top.
3. Add Fruit Layer

Add a layer of fresh blueberries.

Spoon a little more yogurt mixture on top if desired.
4. Top the Parfait

Add whipped cream or extra yogurt.

Sprinkle granola for crunch.

Top with fresh blueberries and mint leaves.
5. Serve

Serve immediately for a crunchy texture.

Or chill for 30 minutes for a thicker, pudding-like consistency.
