Strawberry Cream Crepes with Vanilla Ice Cream

Ingredients

For the Crepe Batter

  • 1 cup (125 g) all-purpose flour

  • 2 large eggs

  • 1 1/4 cups (300 ml) milk

  • 2 tablespoons melted butter

  • 1 tablespoon sugar

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

For the Strawberry Cream Filling

  • 1 cup fresh strawberries, sliced

  • 1 cup heavy whipping cream

  • 3 tablespoons powdered sugar

  • 1 teaspoon vanilla extract

  • 2 tablespoons strawberry puree or jam

Toppings

  • Fresh strawberries

  • Strawberry sauce or syrup

  • Powdered sugar

  • 1–2 scoops vanilla ice cream

  • Chocolate shavings (optional)


Instructions

1. Prepare the Crepe Batter

  1. In a mixing bowl whisk together:

    • flour

    • sugar

    • salt.

  2. Add eggs and slowly pour in milk while whisking.

  3. Add:

    • melted butter

    • vanilla extract.

  4. Mix until smooth and lump-free.

  5. Let the batter rest for 20 minutes (this helps crepes become softer).


2. Cook the Crepes

  1. Heat a non-stick pan over medium heat.

  2. Lightly grease with butter.

  3. Pour about 1/4 cup batter into the pan and swirl to spread thinly.

  4. Cook 1–2 minutes until edges lift and bottom is lightly golden.

  5. Flip and cook another 30–40 seconds.

  6. Repeat with remaining batter.

Stack cooked crepes on a plate.


3. Make the Strawberry Cream

  1. In a chilled bowl beat:

    • heavy cream

    • powdered sugar

    • vanilla extract.

  2. Whip until soft peaks form.

  3. Fold in strawberry puree or jam gently.


4. Assemble the Crepes

  1. Lay a crepe flat on a plate.

  2. Spread strawberry cream across the center.

  3. Add sliced strawberries.

  4. Fold or roll the crepe.


5. Add Toppings

  • Drizzle strawberry syrup over the crepes.

  • Dust with powdered sugar.

  • Add fresh strawberries.

  • Place a scoop of vanilla ice cream on the side.


Serving Tip

Serve immediately while the crepes are slightly warm so the ice cream slowly melts into the strawberry cream.
