Strawberry Raspberry Cream Cake

Ingredients

For the Sponge Cake Base

  • 1 cup (125 g) all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 3 large eggs (room temperature)

  • ¾ cup (150 g) granulated sugar

  • 1 teaspoon vanilla extract

  • ¼ cup (60 ml) milk

  • ¼ cup (60 ml) melted unsalted butter

For the Berry Cream Filling

  • 1 cup fresh strawberries, chopped

  • 1 cup fresh raspberries

  • 1½ cups heavy whipping cream (cold)

  • ½ cup powdered sugar

  • 1 teaspoon vanilla extract

  • 8 oz (225 g) cream cheese, softened

  • 1 tablespoon lemon juice

  • 1 teaspoon gelatin powder (optional for firmer mousse)

For Decoration

  • Fresh strawberries (sliced)

  • Fresh raspberries

  • Mint leaves

  • Powdered sugar (optional)


Instructions

1. Make the Sponge Cake

  1. Preheat oven to 350°F (175°C).

  2. Line a 9×9 inch (23×23 cm) baking pan with parchment paper.

  3. In a bowl, whisk together:

    • flour

    • baking powder

    • salt.

  4. In another bowl, beat eggs and sugar with a mixer for 4–5 minutes until pale and fluffy.

  5. Add vanilla extract.

  6. Gently fold the dry ingredients into the egg mixture.

  7. Add milk and melted butter and mix until smooth.

  8. Pour batter into the pan and bake 18–22 minutes.

  9. Let the cake cool completely.


2. Prepare the Berry Cream

  1. Beat cream cheese until smooth.

  2. Add powdered sugar, vanilla extract, and lemon juice.

  3. In another bowl, whip heavy cream until soft peaks form.

  4. Fold whipped cream into the cream cheese mixture.

  5. Gently fold in chopped strawberries and raspberries.

Optional (for stability):

  • Dissolve gelatin in 2 tablespoons warm water.

  • Mix it into the cream mixture.


3. Assemble the Cake

  1. Spread the berry cream evenly over the cooled sponge cake.

  2. Smooth the top using a spatula.

  3. Refrigerate at least 2–3 hours until firm.


4. Decorate

  1. Pipe whipped cream or berry cream on top.

  2. Decorate with:

    • fresh raspberries

    • sliced strawberries

    • mint leaves.

  3. Lightly dust with powdered sugar if desired.


5. Serve

  • Cut into square slices or bars.

  • Serve chilled for the best texture.


Tips for Best Results

  • Use cold whipping cream so it whips faster.

  • Fresh berries give the best flavor, but frozen berries can work if drained well.

  • Chill the cake overnight for cleaner slices.
