
Biscoff Cheesecake Bars – Creamy Cheesecake with a Rich Cookie Butter Layer
Biscoff Cheesecake Bars combine creamy cheesecake filling with the deep caramel flavor of Biscoff cookie butter. The dessert is built in layers, creating strong visual contrast when sliced.
A crunchy cookie crust forms the base while the cheesecake layer remains smooth and rich. Melted Biscoff spread is added on top and gently swirled, creating a glossy caramel-colored pattern.
When chilled, the cheesecake sets into clean slices that reveal the creamy interior and the cookie butter layer.
Ingredients (Serves 8–10)
For the crust
200 g Biscoff cookies, crushed
90 g melted butter
For the cheesecake filling
450 g cream cheese, softened
120 g sugar
2 eggs
120 ml heavy cream
1 teaspoon vanilla extract
For the topping
150 g Biscoff spread
Crushed Biscoff cookies for garnish
Step-by-step cooking
Step 1 – Prepare the crust
Preheat the oven to 325°F (160°C). Combine crushed Biscoff cookies with melted butter until evenly mixed.
Step 2 – Press the crust
Press the mixture firmly into the bottom of a lined baking pan to create an even base layer.
Step 3 – Bake the crust
Bake the crust for about 8 minutes. Remove from the oven and allow it to cool.
Step 4 – Prepare the cheesecake batter
In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time while mixing gently.
Step 5 – Add cream and vanilla
Stir in heavy cream and vanilla extract until the batter becomes silky.
Step 6 – Assemble the cheesecake layer
Pour the cheesecake batter over the cooled crust and spread evenly.
Step 7 – Add the Biscoff topping
Warm the Biscoff spread slightly until pourable. Drizzle it over the cheesecake layer.
Step 8 – Create a swirl pattern
Use a knife or skewer to gently swirl the Biscoff spread into the batter.
Step 9 – Bake the cheesecake bars
Bake for about 35–40 minutes until the edges are set and the center slightly jiggles.
Step 10 – Chill and slice
Refrigerate for at least 4 hours before slicing into bars. Sprinkle crushed Biscoff cookies on top before serving.
