Layered Chocolate & Vanilla Mousse Cups

Ingredients

For the Dark Chocolate Layer:

  • 150g (5 oz) dark chocolate (60–70%)

  • 1 cup heavy cream (divided)

  • 1 tablespoon sugar (optional)


For the Milk Chocolate Layer:

  • 150g (5 oz) milk chocolate

  • 1 cup heavy cream (divided)


For the Vanilla White Layer:

  • 200g (7 oz) white chocolate

  • 1 cup heavy cream (divided)

  • ½ teaspoon vanilla extract


For Garnish:

  • 1 cup whipped cream

  • Fresh strawberries (halved)

  • Chocolate discs or curls

  • Sugar pearls (optional)

  • Fresh mint (optional)


Instructions

Step 1: Prepare the Dark Chocolate Layer

  1. Melt dark chocolate using a double boiler or microwave (30-second intervals).

  2. Warm ½ cup cream until just hot (do not boil).

  3. Pour warm cream into melted chocolate and stir until smooth.

  4. Whip remaining ½ cup cream to soft peaks.

  5. Gently fold whipped cream into chocolate mixture.

  6. Divide evenly into serving cups (first layer).

  7. Refrigerate 30–40 minutes until slightly set.


Step 2: Prepare the Milk Chocolate Layer

  1. Repeat the same process using milk chocolate.

  2. Carefully spoon over the set dark chocolate layer.

  3. Chill again for 30–40 minutes.


Step 3: Prepare the White Vanilla Layer

  1. Melt white chocolate.

  2. Warm ½ cup cream and mix into melted chocolate.

  3. Add vanilla extract.

  4. Whip remaining cream and fold gently into mixture.

  5. Spoon over the milk chocolate layer.

  6. Refrigerate at least 2–3 hours until fully set.


Step 4: Decorate

  1. Pipe whipped cream on top.

  2. Add fresh strawberry halves.

  3. Garnish with chocolate decorations and sugar pearls.


Tips for Perfect Layers

  • Chill between each layer to keep them clean and defined.

  • Use a spoon and pour gently to avoid mixing layers.

  • For extra stability, add ½ teaspoon gelatin to each layer (optional).

  • Keep refrigerated until serving.
