Garlic Butter Shrimp Scampi – Juicy Shrimp in a Bright Lemon Garlic Butter Sauce

Garlic Butter Shrimp Scampi is built around quick searing and a glossy butter sauce. When shrimp are cooked over high heat, they develop a lightly caramelized surface while remaining tender and juicy inside.

The sauce combines butter, garlic, and fresh lemon juice. As the butter melts and emulsifies with the pan juices, it forms a silky coating that clings to the shrimp. Fresh parsley finishes the dish with a burst of color and freshness.

This dish is fast to prepare yet visually striking, making it ideal for close-up seafood photography and vibrant presentation.

Ingredients (Serves 2–3)

450 g large shrimp, peeled and deveined
1 tablespoon olive oil
Salt and freshly ground black pepper

For the garlic butter sauce

3 tablespoons unsalted butter
4 cloves garlic, minced
3 tablespoons fresh lemon juice
60 ml chicken or seafood broth
½ teaspoon red pepper flakes
2 tablespoons fresh parsley, chopped

Step-by-step cooking

Step 1 – Prepare the shrimp
Pat the shrimp completely dry with paper towels. Removing excess moisture helps the shrimp sear instead of steaming. Season lightly with salt and black pepper.

Step 2 – Heat the skillet
Place a large skillet over medium-high heat and add olive oil. Allow the oil to heat until it begins to shimmer.

Step 3 – Sear the shrimp
Add the shrimp to the hot skillet in a single layer. Cook for about 1–2 minutes without moving them so the underside begins to caramelize.

Step 4 – Flip the shrimp
Turn the shrimp and cook the second side for another 1–2 minutes until they become pink and slightly golden.

Step 5 – Build the garlic butter base
Reduce the heat slightly and add butter to the skillet. Once melted, stir in the minced garlic and cook for about 20–30 seconds until fragrant.

Step 6 – Add lemon and broth
Pour in the lemon juice and broth. Stir gently to combine with the butter and garlic. Allow the sauce to simmer briefly until slightly glossy.

Step 7 – Finish the shrimp
Return the shrimp fully into the sauce and toss gently so they become coated in the garlic butter mixture.
