Ingredients
For the Fruit Salad

2 cups fresh strawberries, hulled and halved

2 cups fresh pineapple, cut into 1-inch cubes

2 kiwis, peeled and diced

½ cup raspberries (optional)

½ cup blueberries (optional)

5 oz (140 g) feta cheese, cut into small cubes
For the Honey-Lime Dressing

3 tbsp honey
-
2 tbsp fresh lime juice
-
1 tsp lime zest
-
1 tbsp extra virgin olive oil
-
½ tsp vanilla extract (optional)
-
Pinch of sea salt
For the Pistachio Topping

¼ cup roasted pistachios, finely chopped
-
1 tsp flaky sea salt (optional)
For Garnish

Fresh mint leaves
-
Extra lime zest
-
Additional honey for drizzling
Instructions

Step 1 – Prepare the Fruit

Wash and dry all the fruit thoroughly.

Hull and halve the strawberries.

Cut the pineapple into bite-sized cubes.

Peel and dice the kiwis.

If using, rinse the raspberries and blueberries carefully.

Place all the fruit into a large mixing bowl.
