Ingredients
For the Grilled Watermelon

1 small seedless watermelon

1 tbsp olive oil

¼ tsp sea salt
For the Balsamic Glaze

½ cup (120 ml) balsamic vinegar

2 tbsp honey
-
1 tsp fresh lemon juice
-
½ tsp freshly cracked black pepper (optional)
For Garnish

Fresh mint leaves
-
Flaky sea salt
-
Finely chopped mint
-
Fresh cracked black pepper

Lime zest (optional)
Instructions

Step 1 – Prepare the Watermelon

Slice the watermelon into 1½-inch (4 cm) thick slabs.

Remove the rind and cut into large cubes or rectangles.

Pat the watermelon dry with paper towels.

Lightly brush each piece with olive oil.
Step 2 – Make the Balsamic Glaze

In a small saucepan, combine:

Honey

Lemon juice

Bring to a gentle simmer over medium heat.

Cook for 8–10 minutes, stirring occasionally, until reduced by half and syrupy.
