1 cup (120 g) powdered sugar
-
2 tbsp whole milk
-
½ tsp vanilla extract
For Garnish
-
Powdered sugar

Ground cinnamon (optional)
Instructions

Step 1 – Prepare the Apple Filling
-
Melt the butter in a skillet over medium heat.
-
Add the diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, ginger, lemon juice, vanilla extract, and salt.
-
Cook for 6–8 minutes, stirring occasionally, until the apples begin to soften.
-
Stir in the cornstarch and cook for another 1–2 minutes, until the filling thickens.
-
Remove from the heat and let the filling cool completely.
Step 2 – Prepare the Puff Pastry
-
Preheat the oven to 400°F (200°C).
-
Line a baking sheet with parchment paper.
-
Cut each puff pastry sheet into 6 equal rectangles, making 12 rectangles total.
Step 3 – Fill and Fold
-
Spoon about 1½ tablespoons of the cooled apple filling onto one half of each pastry rectangle.
-
Fold the pastry over to form a rectangle.
-
Press the edges firmly with a fork to seal.
-
Cut two small slits on top of each turnover to allow steam to escape.
Step 4 – Apply Egg Wash
-
Whisk together the egg and milk.
-
Brush the tops of each pastry generously with the egg wash.
Step 5 – Bake
-
Bake for 20–25 minutes, or until the pastries are puffed and deeply golden brown.
-
Transfer to a wire rack and cool for 10 minutes.
Step 6 – Prepare the Vanilla Glaze
-
In a small bowl, whisk together:
-
Powdered sugar
-
Milk
-
Vanilla extract
-
-
Stir until smooth and pourable.
Step 7 – Finish
-
Drizzle the vanilla glaze over the warm turnovers.
-
Dust lightly with powdered sugar.
-
Sprinkle with a pinch of cinnamon, if desired.
-
Serve warm or at room temperature.
Chef's Tips
-
Use Honeycrisp apples for natural sweetness or Granny Smith for a classic tart filling.
-
Allow the apple filling to cool completely before assembling to keep the pastry crisp.
-
Seal the pastry edges well to prevent the filling from leaking during baking.
-
Chill the assembled turnovers for 10 minutes before baking for an even flakier texture.
-
For extra shine, brush the baked pastries with warm apricot jam before glazing.
