Ingredients

For the Puff Pastry

  • 2 sheets (14 oz / 400 g) all-butter puff pastry, thawed

  • 1 large egg

  • 1 tbsp milk (for egg wash)

For the Apple Filling

  • 3 medium Honeycrisp or Granny Smith apples, peeled, cored, and diced

  • 2 tbsp unsalted butter

  • ⅓ cup (65 g) light brown sugar

  • 2 tbsp granulated sugar

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • ¼ tsp ground ginger (optional)

  • 1 tsp vanilla extract

  • 1 tbsp fresh lemon juice

  • 1 tbsp cornstarch

  • Pinch of salt

For the Vanilla Glaze

  • 1 cup (120 g) powdered sugar

  • 2 tbsp whole milk

  • ½ tsp vanilla extract

For Garnish

  • Powdered sugar

  • Ground cinnamon (optional)

Instructions

Step 1 – Prepare the Apple Filling

  1. Melt the butter in a skillet over medium heat.

  2. Add the diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, ginger, lemon juice, vanilla extract, and salt.

  3. Cook for 6–8 minutes, stirring occasionally, until the apples begin to soften.

  4. Stir in the cornstarch and cook for another 1–2 minutes, until the filling thickens.

  5. Remove from the heat and let the filling cool completely.

Step 2 – Prepare the Puff Pastry

  1. Preheat the oven to 400°F (200°C).

  2. Line a baking sheet with parchment paper.

  3. Cut each puff pastry sheet into 6 equal rectangles, making 12 rectangles total.

Step 3 – Fill and Fold

  1. Spoon about 1½ tablespoons of the cooled apple filling onto one half of each pastry rectangle.

  2. Fold the pastry over to form a rectangle.

  3. Press the edges firmly with a fork to seal.

  4. Cut two small slits on top of each turnover to allow steam to escape.

Step 4 – Apply Egg Wash

  1. Whisk together the egg and milk.

  2. Brush the tops of each pastry generously with the egg wash.

Step 5 – Bake

  1. Bake for 20–25 minutes, or until the pastries are puffed and deeply golden brown.

  2. Transfer to a wire rack and cool for 10 minutes.

Step 6 – Prepare the Vanilla Glaze

  1. In a small bowl, whisk together:

    • Powdered sugar

    • Milk

    • Vanilla extract

  2. Stir until smooth and pourable.

Step 7 – Finish

  1. Drizzle the vanilla glaze over the warm turnovers.

  2. Dust lightly with powdered sugar.

  3. Sprinkle with a pinch of cinnamon, if desired.

  4. Serve warm or at room temperature.
