π Strawberry Bingsu (Sweet Korean Dessert)

Servings: 1–2 | Prep Time: 10 minutes | Total Time: 10–15 minutes
β What is Bingsu?
Bingsu (λΉμ) is a beloved Korean shaved ice dessert, often made with ultra-fine shaved ice or milk ice, layered with sweet toppings like fruits, syrups, red bean paste, and condensed milk. Strawberry Bingsu is one of the most popular versions—beautiful, fruity, and perfectly refreshing.
π₯ Ingredients:
-
2 cups ice, finely crushed or shaved
(Use a blender or ice shaver for a snow-like texture. You can freeze milk instead of water for creamier bingsu.) -
½ cup sweetened condensed milk
(Drizzle over ice for creaminess and sweetness.) -
¼ cup fresh strawberries, chopped
(Use ripe, juicy berries for the best flavor.) -
2 tablespoons strawberry syrup
(Adds color and extra strawberry flavor. Optional if strawberries are sweet.) -
¼ cup mochi pieces (optional)
(For chewy texture—look for strawberry or plain mochi cubes.) -
¼ cup sweet red bean paste (pat) (optional)
(Traditional Korean topping—adds a soft, sweet contrast.) -
2 tablespoons powdered sugar (optional for dusting)
-
Fresh mint leaves (for garnish)
π Instructions:
-
Prepare the Ice
Use a blender or ice shaver to crush the ice until very fine, like snow. For a creamier version, freeze milk in ice cube trays and blend it. -
Plate the Ice
Mound the shaved ice in a chilled bowl or dessert cup. Shape it into a dome if desired for a classic bingsu look. -
Drizzle Condensed Milk
Generously pour the sweetened condensed milk over the top of the ice, letting it drip down the sides. -
Add Strawberries
Scatter chopped fresh strawberries on and around the shaved ice. -
Top with Strawberry Syrup
Drizzle 1–2 tablespoons of strawberry syrup over the strawberries and ice for added flavor and color. -
Add Mochi and Red Bean (Optional)
If using, gently place mochi pieces and spoonfuls of red bean paste around or on top of the ice for added texture and sweetness. -
Garnish and Dust
Lightly dust with powdered sugar and add a few mint leaves for a beautiful finish. -
Serve Immediately
Bingsu melts quickly—enjoy it fresh with a long spoon!
π Tips & Variations:
-
Frozen Strawberry Sauce Option:
Blend fresh strawberries with a bit of sugar and lemon juice, then chill and drizzle for a homemade fruit sauce. -
Milk Ice Variation:
For extra richness, freeze sweetened milk instead of water for the ice and shave it—it’s how premium bingsu cafés do it! -
Topping Swaps:
Try adding whipped cream, vanilla ice cream, or even cheesecake bites for a modern twist.
π§ Fun Fact:
In Korea, bingsu is often a shared dessert among friends or family, especially during summer. It’s common to see huge bingsu bowls served in cafés, topped with everything from fruit to chocolate and even cereal.
