π Strawberry Poke Cake
A light, fruity, and fluffy dessert made with white cake, sweet strawberry gelatin, and a homemade whipped cream topping. Perfect for spring and summer gatherings!

For the Cake:

1 box white cake mix (plus eggs, oil, and water as listed on the box)

1 box (3 oz) strawberry gelatin (like Jell-O)

1 cup boiling water

½ cup cold water
For the Topping:

2 cups heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

1½ cups fresh strawberries, sliced

Bake the Cake
Prepare the white cake batter according to the instructions on the box.
Bake in a 9x13 inch pan.
Allow to cool for about 10 minutes once out of the oven. -
Poke the Cake
Use a straw, skewer, or wooden spoon handle to poke holes evenly across the top of the warm cake, about 1 inch apart.

Add the Strawberry Filling
In a bowl, dissolve the strawberry gelatin in 1 cup of boiling water.
Stir in ½ cup of cold water.
Pour the mixture slowly and evenly over the entire cake, making sure it seeps into the holes.
Refrigerate the cake for at least 2 hours to allow it to set. -
Make the Whipped Cream Topping
In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread the whipped cream evenly over the chilled cake. -
Decorate
Arrange sliced fresh strawberries over the top.
For an extra decorative touch, pipe a swirl of whipped cream and place a halved strawberry on top.
