Cod with Shrimp and Piquillo Pepper Sauce 🐟🍀🌢️

Ingredients:

  • 4 pieces of desalted cod loins

  • 200 g peeled shrimp

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 piquillo pepper, cut into strips

  • 150 ml fish broth

  • 1 teaspoon sweet paprika

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh chopped parsley for garnish


Instructions:

  1. In a large skillet, heat the olive oil over medium heat.

  2. Sauté the chopped onion and garlic until golden.

  3. Add the shrimp and cook for about 2 minutes.

  4. Stir in the piquillo pepper, sweet paprika, salt, and pepper.

  5. Pour in the fish broth and let it simmer for 5 minutes.

  6. Place the cod loins into the skillet, cover, and cook over low heat for about 10 minutes, or until the cod is tender and flakes easily.

  7. Serve hot, garnished with fresh chopped parsley.
