
Chicken Breast in Mushroom Sauce ππ
A comforting and elegant dish that combines tender chicken breasts with a rich, savory mushroom cream sauce. Perfect for a cozy dinner or to impress guests without too much fuss!

4 boneless, skinless chicken breasts

300g (about 10 oz) fresh mushrooms, sliced (white or cremini work great)

1 medium onion, finely chopped

2 garlic cloves, minced

1 cup chicken broth (preferably low sodium)

1/2 cup heavy cream (whipping cream)

2 tablespoons olive oil or butter (or a mix of both for extra flavor)

Salt and pepper to taste

Optional: Fresh parsley for garnish

Prepare the Chicken:
Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. -
Sear the Chicken:
Heat the olive oil (or butter) in a large skillet over medium-high heat.
Once hot, add the chicken breasts. Sear for about 4–5 minutes per side, until golden brown and nearly cooked through.
Remove the chicken from the skillet and set aside. -
Sauté the Aromatics:
In the same skillet, add a touch more oil or butter if needed.
Add the chopped onion and sauté for 2–3 minutes until softened and translucent.
Add the minced garlic and cook for another 30 seconds, stirring constantly to avoid burning. -
Cook the Mushrooms:
Add the sliced mushrooms to the skillet. Cook for about 5–7 minutes, stirring occasionally, until they release their juices and become tender and golden. -
Deglaze & Simmer the Sauce:
Pour in the chicken broth and stir well, scraping up any browned bits stuck to the bottom of the pan—this adds rich flavor!
Let the broth simmer for 5 minutes, reducing slightly. Then stir in the heavy cream. Bring to a gentle simmer. -
Return the Chicken:
Place the chicken breasts back into the skillet with the sauce. Cover and cook on low heat for another 5–7 minutes, or until the chicken is fully cooked through (internal temp should reach 165°F or 75°C). -
Finish and Serve:
Taste and adjust seasoning with more salt or pepper if needed.
Garnish with freshly chopped parsley for a pop of color and freshness.
