Avocado and Corn Breakfast Plate

Ingredients:

  • 1 egg 🍳 (fried to your preference)

Instructions:

  1. Prepare the egg:

    • Heat a non-stick pan over medium heat.
    • Add a small amount of olive oil or butter (if desired).
    • Fry the egg to your preference:
      • Sunny-side up: Cook until the whites are set but the yolk remains runny (about 3-4 minutes).
      • Scrambled: Beat the egg and cook while stirring for 2-3 minutes until soft and fluffy.
      • Over-easy: Flip and cook for another 30 seconds to slightly set the yolk.
  2. Toast the multigrain bread:

    • While the egg is cooking, toast the bread until golden brown and crisp.
  3. Prepare the vegetables and fruit:

    • Slice the avocado into thin pieces.
    • Halve the cherry tomatoes for extra juiciness.
    • Steam or grill the corn kernels for 2-3 minutes (if using fresh corn).
    • Rinse the blueberries and set them aside.
  4. Assemble the plate:

    • Place the toasted multigrain bread on a plate.
    • Arrange the fried egg, avocado slices, cherry tomatoes, corn, and blueberries beautifully around it.
    • Drizzle with a little olive oil, and sprinkle with salt, black pepper, and fresh herbs if desired.
