🫐 Sweet Cheese Crepes with Blueberries & Maple Syrup

Soft golden crepes filled with creamy cheese filling, topped with fresh blueberries, powdered sugar, and maple syrup.


📝 Ingredients (Serves 3–4)

For the Crepes:

  • 1 cup (125g) all-purpose flour

  • 2 large eggs

  • 1¼ cups (300ml) milk

  • 1 tablespoon melted butter

  • 1 tablespoon sugar

  • ½ teaspoon vanilla extract

  • Pinch of salt


For the Cream Cheese Filling:

  • 1 cup (225g) ricotta cheese or cream cheese (softened)

  • 2 tablespoons powdered sugar

  • ½ teaspoon vanilla extract

  • 1–2 tablespoons heavy cream (if needed for smoothness)


For Topping:

  • 1 cup fresh blueberries

  • Maple syrup (or honey)

  • Powdered sugar (for dusting)

  • Fresh mint or thyme (optional garnish)


👩‍🍳 Instructions

1️⃣ Make the Crepe Batter

  1. In a bowl, whisk flour and salt.

  2. Add eggs, milk, melted butter, sugar, and vanilla.

  3. Whisk until smooth and thin.

  4. Let batter rest for 20 minutes.


2️⃣ Cook the Crepes

  1. Heat a non-stick pan over medium heat.

  2. Lightly grease with butter.

  3. Pour about ¼ cup batter and swirl thinly.

  4. Cook 1–2 minutes until lightly golden.

  5. Flip and cook another 30–60 seconds.

  6. Stack and cool slightly.
