Ingredients (Serves 2–3)

For the Dough:

  • 2 cups all-purpose flour

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • 1 teaspoon instant yeast

  • ¾ cup warm water

  • 1 tablespoon olive oil

For the Topping:

  • 1 cup fresh blueberries

  • 1 ½ cups mozzarella cheese (sliced or shredded)

  • 2 tablespoons honey

  • 1 teaspoon fresh thyme leaves

  • 1 tablespoon chopped parsley

  • 1 tablespoon olive oil

  • Sea salt (to taste)

  • Black pepper (optional)


Instructions

Step 1: Prepare the Dough

  1. In a bowl, mix flour, sugar, salt, and yeast.

  2. Add warm water and olive oil.

  3. Knead for 8–10 minutes until smooth and elastic.

  4. Cover and let rise for 1 hour until doubled in size.

Step 2: Shape the Flatbread

  1. Preheat oven to 400°F (200°C).

  2. Divide dough into 2 portions.

  3. Roll each into an oval or round flatbread shape.

  4. Place on a baking tray lined with parchment paper.

Step 3: Add Toppings

  1. Brush surface lightly with olive oil.

  2. Add mozzarella slices evenly.

Step 4: Bake

Ingredients (Serves 3–4)

For the Pancakes:

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 egg

  • 1 ¼ cups milk

  • 2 tablespoons melted butter

  • 1 teaspoon vanilla extract

  • ¾ cup fresh blueberries

For the Blueberry Syrup:

  • 1 cup fresh blueberries

  • ¼ cup sugar

  • 2 tablespoons water

  • 1 teaspoon lemon juice


Instructions

Step 1: Make Pancake Batter

  1. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.

  2. In another bowl, whisk egg, milk, melted butter, and vanilla.

  3. Combine wet and dry ingredients. Do not overmix.

  4. Gently fold in blueberries.

Step 2: Cook Pancakes

  1. Heat a non-stick pan over medium heat.
