Rustic Seafood Stew (Shrimp, Mussels & Clams)

Ingredients (Serves 3–4)
Seafood:
- 200 g shrimp (peeled & deveined)
- 300 g mussels (cleaned)
- 300 g clams (cleaned)
- 200 g white fish (cut into chunks)
Base:
- 2 tbsp olive oil
- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 1 carrot (diced)
- 1 celery stalk (diced)
Broth:
- 400 g canned tomatoes (crushed)
- 500 ml seafood or chicken stock
- 100 ml white wine
- 1 tbsp tomato paste
Seasoning:
- 1 tsp paprika
- 1/2 tsp chili flakes (optional)
- Salt & black pepper
- 1 tsp dried oregano or thyme
Finish:
- 1 tbsp lemon juice
- Fresh parsley
- Lemon wedges
Instructions

1. Build the base
- Heat olive oil in a large pot
- Add onion, carrot, celery
- Cook until softened (5–6 minutes)
- Add garlic → sauté briefly
2. Make the broth
- Stir in tomato paste
- Add crushed tomatoes, stock, and white wine
- Season with paprika, chili flakes, herbs, salt & pepper
- Simmer for 10–15 minutes
3. Cook the seafood
- Add fish chunks → cook 3 minutes
- Add shrimp → cook 2 minutes
- Add mussels and clams
- Cover and cook until shells open (5–6 minutes)
👉 Discard any unopened shells
4. Finish
- Add lemon juice
- Taste and adjust seasoning
5. Serve
- Ladle into bowls
- Garnish with fresh parsley
- Serve with crusty bread

- Use fresh seafood → sweeter broth
- Don’t overcook → seafood stays tender
- Wine adds depth (worth it)
- Let stew rest 5 minutes before serving
