🧾 Ingredients (Serves 2–3)

For the chicken:

  • 500g (1 lb) chicken thighs or chicken breast
  • Salt and black pepper (to taste)
  • 1 tablespoon olive oil

For the raspberry chili sauce:

  • 1 cup fresh or frozen raspberries
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar (apple cider or balsamic)
  • 2 cloves garlic, minced
  • 1–2 chilies or jalapeños, sliced (adjust to spice level)
  • ½ cup chicken broth

👩‍🍳 Instructions

1. Cook the chicken

Season the chicken with salt and pepper.
Heat olive oil in a pan over medium heat.
Cook the chicken for about 5–6 minutes per side, until golden brown and fully cooked.
Remove from the pan and set aside.

2. Make the sauce

In the same pan, sauté the garlic and chilies until fragrant.
Add raspberries and gently mash them with a spoon.
Stir in honey, soy sauce, vinegar, and chicken broth.
Simmer over low heat until the sauce thickens slightly.

3. Combine

Return the chicken to the pan.
Coat it well with the sauce and let it simmer for another 3–5 minutes until fully glazed.

4. Garnish & serve

Top with fresh raspberries, chopped cilantro or green onions, and extra chili slices if desired.
