Step 1: Prepare the Cake Batter

  1. Preheat oven to 180°C (350°F).
  2. Line a 10x15-inch (25x38 cm) baking pan with parchment paper.
  3. In a bowl, beat eggs and sugar until pale, thick, and fluffy (about 5 minutes).
  4. Add vanilla, oil, buttermilk, and red food coloring. Mix until smooth.
  5. Sift in flour, cocoa powder, baking powder, and salt.
  6. Gently fold until fully combined (do not overmix).

Step 2: Bake the Cake

  1. Pour batter into the prepared pan and spread evenly.
  2. Bake for 10–12 minutes until the cake springs back lightly when touched.

Step 3: Roll While Warm

  1. Dust a clean kitchen towel with powdered sugar.
  2. Turn the hot cake onto the towel and peel off parchment paper.
  3. Roll the cake tightly with the towel (from the short side).
  4. Let it cool completely while rolled (this prevents cracking).

Step 4: Make the Filling

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. In another bowl, whip heavy cream until stiff peaks form.
  3. Fold whipped cream into the cream cheese mixture until light and fluffy.

Step 5: Assemble

  1. Carefully unroll the cooled cake.
  2. Spread an even layer of cream cheese filling over the surface.
  3. Scatter Oreo cookies evenly across the filling.
  4. Gently roll the cake back up (without the towel), keeping it tight.

Step 6: Chill

  • Wrap the roll in plastic wrap and refrigerate for at least 1–2 hours to set.

Step 7: Decorate

  1. Spread a thin layer of cream cheese frosting on top (optional).
  2. Sprinkle with red velvet crumbs and crushed Oreos.
  3. Slice and serve.

Pro Tips (Bakery-Level Finish)

  • Do not overbake → keeps the cake soft and flexible.
  • Roll the cake while warm → prevents cracks later.
  • Chill before slicing → cleaner cuts and better structure.
  • Use gel food coloring for a more vibrant red.
