🧾 Ingredients (Serves 6 domes)

Cheesecake Mousse:

  • 250 g cream cheese (room temperature)
  • 80 g sugar
  • 200 ml heavy cream (cold)
  • 1 tsp vanilla extract
  • 6 g gelatin (bloomed in water)

Pomegranate Insert:

  • 200 ml pomegranate juice
  • 40 g sugar
  • 1 tsp lemon juice
  • 4 g gelatin (bloomed)

Base:

  • 120 g crushed biscuits
  • 50 g melted butter

Pomegranate Mirror Glaze:

  • 150 ml pomegranate juice
  • 80 g sugar
  • 80 ml water
  • 80 g glucose syrup (or corn syrup)
  • 80 g sweetened condensed milk
  • 8 g gelatin (bloomed)
  • Red food coloring (optional, for intensity)

Decoration:

  • Fresh pomegranate seeds
  • Edible gold leaf (optional)

1. Make pomegranate insert

Heat pomegranate juice, sugar, and lemon juice.
Add gelatin and stir until dissolved.
Pour into small molds and freeze until solid.

2. Prepare cheesecake mousse

Beat cream cheese and sugar until smooth.
Warm a small portion of cream and dissolve gelatin in it.
Mix into cream cheese with vanilla.

Whip remaining cream to soft peaks and gently fold in.

3. Make the base

Mix crushed biscuits with melted butter.
Press into small discs and chill.

4. Assemble domes

Fill molds halfway with mousse.
Insert frozen pomegranate center.
Cover with more mousse.
Seal with biscuit base.

Freeze for at least 6 hours or overnight.

5. Prepare mirror glaze

Heat juice, water, sugar, and glucose until dissolved.
Add condensed milk and gelatin.
Blend until smooth.

Cool glaze to 30–35°C (86–95°F).

6. Glaze

Unmold frozen domes and place on a rack.
Pour glaze evenly for a smooth mirror finish.

7. Decorate

Top with fresh pomegranate seeds and gold leaf.

8. Serve

Thaw in refrigerator for 1–2 hours before serving.
