Sponge Cake:
- 4 large eggs
- 100 g sugar
- 100 g all-purpose flour
- 1 tsp vanilla extract
- 1 tbsp milk
- 1 tbsp vegetable oil
Berry Filling:
- 150 g raspberry or strawberry jam
- 100 g fresh raspberries
Whipped Cream:
- 200 ml heavy cream (cold)
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Berry Sauce (Glaze):
- 150 g mixed berries (raspberries, strawberries, blueberries)
- 50 g sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch + 2 tbsp water
Decoration:
- Fresh berries
- Powdered sugar
- Edible flowers (optional)

1. Make the sponge cake
Preheat oven to 170Β°C (340Β°F).
Line a rectangular baking tray with parchment paper.
Beat eggs and sugar until pale, thick, and fluffy (about 5β7 minutes).
Gently fold in sifted flour.
Add vanilla, milk, and oil, mixing carefully.
Pour batter into the tray and spread evenly.
Bake for 12β15 minutes until lightly golden.
2. Roll while warm
Place a clean parchment or towel over the cake.
Flip it out and peel off the baking paper.
Roll the cake gently while still warm, then let it cool.
3. Prepare whipped cream
Whip heavy cream with powdered sugar and vanilla until soft peaks form.
4. Make berry sauce
Cook berries, sugar, and lemon juice over medium heat.
Add cornstarch slurry and simmer until thick and glossy.
Let cool completely.
5. Assemble
Unroll the cooled cake.
Spread a layer of jam, then whipped cream.
Add fresh raspberries evenly.
Roll the cake back tightly.
6. Decorate
Pour berry sauce over the top.
Garnish with fresh berries and edible flowers.
Dust lightly with powdered sugar if desired.
7. Chill
Refrigerate for 1β2 hours before slicing for clean cuts.
