Beef Ribs:
- 600–800 g beef short ribs
- Salt & black pepper
- 1 tbsp olive oil
Braising Base:
- 1 onion (sliced)
- 2 carrots (cut into chunks)
- 2 cloves garlic
- 200 ml red wine
- 300 ml beef stock
- 2 tbsp tomato paste
- 1 tsp thyme or rosemary
Mashed Potatoes:
- 3–4 potatoes (peeled)
- 50 g butter
- 100 ml milk or cream
- Salt
Optional Garnish:
- Fresh thyme
- Cranberries or berries (for acidity & color)

1. Sear ribs
Season ribs with salt and pepper.
Heat oil in a pot → sear all sides until deeply browned.
Remove and set aside.
2. Build base
In the same pot, sauté onion, carrot, and garlic.
Add tomato paste → cook briefly.
3. Deglaze
Pour in red wine → scrape the bottom.
Let it reduce slightly.
4. Braise
Add beef stock and herbs.
Return ribs to pot.
Cover and cook:
- Oven: 160°C (320°F) for 2.5–3 hours
OR
- Stovetop: low heat for ~2–3 hours
Until meat is fork-tender.
5. Make mashed potatoes
Boil potatoes until soft.
Mash with butter, milk, and salt until smooth.
6. Reduce sauce
Remove ribs.
Simmer sauce until thick and glossy.
7. Plate
Spread mashed potatoes.
Place ribs on top.
Spoon sauce over generously.
