π§Ύ INGREDIENTS (8-inch tart)
πΉ Tart Crust (Shortcrust)
- 200 g all-purpose flour
- 100 g cold unsalted butter (cubed)
- 50 g powdered sugar
- 1 egg yolk
- 2–3 tbsp cold water
- Pinch of salt

- 250 ml milk
- 2 egg yolks
- 50 g sugar
- 20 g cornstarch
- 1 tsp vanilla extract
- 20 g butter
πΉ Berry Topping
- 1/2 cup raspberries
- 1/2 cup blueberries
- 1/4 cup pomegranate seeds (optional)
πΉ Berry Glaze
- 1/2 cup mixed berries (fresh or frozen)
- 2 tbsp sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch + 1 tbsp water

- Powdered sugar
- Mint or rosemary
π₯ INSTRUCTIONS

Step 1: Make Tart Crust
- Mix flour + sugar + salt
- Rub in cold butter until crumbly
- Add egg yolk + cold water
- Form dough → do NOT overwork
π Chill for 30 minutes
Step 2: Blind Bake
- Roll dough and fit into tart pan
- Prick base with fork
- Bake at 180°C (356°F) for 15–18 min
π Let cool completely
Step 3: Make Custard Cream
- Heat milk (do not boil)
- Whisk egg yolks + sugar + cornstarch
- Slowly pour warm milk into mixture
- Cook on low heat until thick
- Add butter + vanilla
π Cool completely before using
Step 4: Make Berry Glaze
- Cook berries + sugar + lemon juice
- Mash lightly
- Add cornstarch slurry
- Simmer until glossy & thick

Step 5: Assemble
- Spread custard evenly in tart shell
- Add berry glaze layer
- Arrange fresh berries on top
Step 6: Finish
- Dust powdered sugar
- Add herbs for aesthetic
- Chill 1–2 hours before serving
