Ingredients:

2 ripe avocados, halved and pitted

1/2 lb cooked shrimp, chopped

1/2 cup diced cucumber

1/4 cup diced red onion

1/2 cup diced tomato

1 tbsp lime juice

Salt & pepper to taste

Fresh cilantro for garnish (optional)
Instructions:

Scoop out some flesh from each avocado half to make room for the filling. Dice the scooped avocado and set aside.

In a bowl, combine the shrimp, diced avocado, cucumber, onion, tomato, lime juice, salt, and pepper.
