Ingredients
For the Chicken

4 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp Italian seasoning
-
1 tsp salt
-
½ tsp black pepper
For the Spinach Filling
-
2 cups fresh spinach, chopped
-
4 oz (115 g) cream cheese, softened
-
½ cup mozzarella cheese, shredded
-
¼ cup Parmesan cheese, grated
-
2 garlic cloves, minced
-
¼ tsp salt
-
¼ tsp black pepper
For the Creamy Parmesan Sauce
-
2 tbsp butter
-
3 garlic cloves, minced
-
1 cup heavy cream
-
½ cup chicken broth
-
½ cup Parmesan cheese, grated
-
1 tsp Dijon mustard
-
½ tsp Italian seasoning
-
Salt and black pepper to taste
Garnish

Fresh parsley, chopped

Extra Parmesan cheese
Instructions
Step 1 – Prepare the Filling

In a bowl, combine spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper.

Mix until evenly combined.

Set aside.
Step 2 – Stuff the Chicken

Using a sharp knife, cut a pocket into the side of each chicken breast.

Fill each pocket generously with the spinach mixture.
-
Secure with toothpicks if needed.
Step 3 – Season the Chicken

Mix paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.

Rub evenly over both sides of the chicken.
Step 4 – Sear the Chicken

Heat olive oil in a large skillet over medium-high heat.

Sear chicken for 4–5 minutes per side until golden brown.

Transfer to a plate.
Step 5 – Make the Parmesan Sauce

In the same skillet, melt butter.
-
Add garlic and sauté for 30 seconds.
-
Pour in chicken broth and heavy cream.
-
Stir in Dijon mustard and Italian seasoning.
-
Add Parmesan cheese and whisk until smooth.
-
Simmer for 3–4 minutes until slightly thickened.
Step 6 – Finish Cooking

Return chicken to the skillet.
-
Spoon sauce over the top.
-
Cover and cook over low heat for 10–12 minutes, or until internal temperature reaches 165°F (74°C).
Step 7 – Serve

Place chicken on serving plates.

Top with extra spinach filling if desired.

Generously spoon Parmesan cream sauce over the chicken.

Garnish with parsley and Parmesan.
