Creamy Spinach & Cheese Stuffed Chicken Breast

Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp Italian seasoning

  • 1 tsp salt

  • ½ tsp black pepper

For the Spinach Filling

  • 2 cups fresh spinach, chopped

  • 4 oz (115 g) cream cheese, softened

  • ½ cup mozzarella cheese, shredded

  • ¼ cup Parmesan cheese, grated

  • 2 garlic cloves, minced

  • ¼ tsp salt

  • ¼ tsp black pepper

For the Creamy Parmesan Sauce

  • 2 tbsp butter

  • 3 garlic cloves, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup Parmesan cheese, grated

  • 1 tsp Dijon mustard

  • ½ tsp Italian seasoning

  • Salt and black pepper to taste

Garnish

  • Fresh parsley, chopped

  • Extra Parmesan cheese

Instructions

Step 1 – Prepare the Filling

  1. In a bowl, combine spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper.

  2. Mix until evenly combined.

  3. Set aside.

Step 2 – Stuff the Chicken

  1. Using a sharp knife, cut a pocket into the side of each chicken breast.

  2. Fill each pocket generously with the spinach mixture.

  3. Secure with toothpicks if needed.

Step 3 – Season the Chicken

  1. Mix paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.

  2. Rub evenly over both sides of the chicken.

Step 4 – Sear the Chicken

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Sear chicken for 4–5 minutes per side until golden brown.

  3. Transfer to a plate.

Step 5 – Make the Parmesan Sauce

  1. In the same skillet, melt butter.

  2. Add garlic and sauté for 30 seconds.

  3. Pour in chicken broth and heavy cream.

  4. Stir in Dijon mustard and Italian seasoning.

  5. Add Parmesan cheese and whisk until smooth.

  6. Simmer for 3–4 minutes until slightly thickened.

Step 6 – Finish Cooking

  1. Return chicken to the skillet.

  2. Spoon sauce over the top.

  3. Cover and cook over low heat for 10–12 minutes, or until internal temperature reaches 165°F (74°C).

Step 7 – Serve

  1. Place chicken on serving plates.

  2. Top with extra spinach filling if desired.

  3. Generously spoon Parmesan cream sauce over the chicken.

  4. Garnish with parsley and Parmesan.
