Chocolate Panna Cotta with Dark Chocolate Ganache

Ingredients

Panna Cotta

  • 2 cups (500 ml) heavy cream

  • 1 cup (250 ml) whole milk

  • ⅓ cup (80 g) granulated sugar

  • 2½ tsp (8 g) powdered gelatin

  • 2 tbsp cold water

  • 1 tsp vanilla extract

  • Pinch of salt

Chocolate Ganache

  • 5 oz (150 g) dark chocolate, finely chopped

  • ½ cup (120 ml) heavy cream

  • 1 tbsp unsalted butter (optional)

Garnish

  • Chocolate shavings

  • Fresh strawberries or raspberries

  • Chocolate curls

  • Cocoa powder (optional)

Instructions

Step 1 – Bloom the Gelatin

  1. Add gelatin to a small bowl.

  2. Pour cold water over it.

  3. Let stand for 5–10 minutes until fully bloomed.

Step 2 – Make the Panna Cotta Base

  1. In a saucepan, combine heavy cream, milk, sugar, and salt.

  2. Heat over medium heat while stirring.

  3. Do not boil.

  4. Remove from heat once the mixture is steaming.

  5. Stir in bloomed gelatin until dissolved completely.

  6. Add vanilla extract.

Step 3 – Chill

  1. Pour mixture into ramekins or silicone molds.

  2. Cool to room temperature.

  3. Refrigerate for 4–6 hours or overnight until firm.

Step 4 – Make the Ganache

  1. Place chopped chocolate in a bowl.

  2. Heat cream until just simmering.

  3. Pour hot cream over chocolate.

  4. Let sit for 2 minutes.

  5. Stir until smooth and glossy.

  6. Mix in butter for extra shine.

Step 5 – Assemble

  1. Unmold panna cotta onto serving plates if desired.

  2. Pour ganache over the chilled panna cotta.

  3. Allow chocolate to naturally drip down the sides.

Step 6 – Garnish

  1. Sprinkle chocolate shavings over the top.

  2. Add fresh berries.

  3. Finish with chocolate curls or a light cocoa dusting.

Tips for the Picture-Perfect Look

  • Chill the panna cotta overnight for cleaner edges.

  • Let the ganache cool slightly before pouring so it creates thick drips.

  • Use 70% dark chocolate for the glossy finish seen in the photo.

  • Garnish immediately before serving for maximum freshness.
