Ingredients
For the Chicken

4 large boneless, skinless chicken breasts

8 oz (225 g) fresh mozzarella cheese, sliced

1 cup cherry tomatoes, halved

¼ cup fresh basil leaves, chopped

2 tbsp olive oil
-
1 tsp garlic powder
-
1 tsp Italian seasoning
-
½ tsp paprika
-
Salt and black pepper, to taste
For the Balsamic Glaze
-
½ cup balsamic vinegar
-
2 tbsp honey
-
1 tbsp brown sugar
Garnish

Fresh basil leaves
-
Cherry tomatoes, halved

Chopped parsley
Instructions
Step 1 – Prepare the Chicken

Preheat oven to 400°F (200°C).

Butterfly each chicken breast by slicing horizontally without cutting all the way through.
-
Open each breast like a book.
Step 2 – Stuff the Chicken
-
Season both sides with salt, pepper, garlic powder, paprika, and Italian seasoning.

Layer mozzarella slices inside each chicken breast.
-
Add chopped basil.
-
Add several cherry tomato halves.
-
Fold the chicken closed.
-
Secure with toothpicks if necessary.
Step 3 – Sear

Heat olive oil in a large oven-safe skillet.

Sear chicken for 3–4 minutes per side until golden brown.
Step 4 – Bake

Transfer skillet to oven.

Bake for 18–22 minutes.

Chicken is done when internal temperature reaches 165°F (74°C).
Step 5 – Make the Balsamic Glaze

While chicken bakes, combine balsamic vinegar, honey, and brown sugar in a small saucepan.

Simmer over medium heat for 8–10 minutes.

Reduce until thick and syrupy.
-
Remove from heat and allow to cool slightly.
Step 6 – Assemble

Let chicken rest for 5 minutes.

Slice into thick rounds.
-
Arrange on a serving platter.

Drizzle generously with balsamic glaze.

Garnish with fresh basil, cherry tomatoes, and parsley.
