Ingredients

For the Chicken

  • 4 large boneless, skinless chicken breasts

  • 8 oz (225 g) fresh mozzarella cheese, sliced

  • 1 cup cherry tomatoes, halved

  • ¼ cup fresh basil leaves, chopped

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt and black pepper, to taste

For the Balsamic Glaze

  • ½ cup balsamic vinegar

  • 2 tbsp honey

  • 1 tbsp brown sugar

Garnish

  • Fresh basil leaves

  • Cherry tomatoes, halved

  • Chopped parsley

Instructions

Step 1 – Prepare the Chicken

  1. Preheat oven to 400°F (200°C).

  2. Butterfly each chicken breast by slicing horizontally without cutting all the way through.

  3. Open each breast like a book.

Step 2 – Stuff the Chicken

  1. Season both sides with salt, pepper, garlic powder, paprika, and Italian seasoning.

  2. Layer mozzarella slices inside each chicken breast.

  3. Add chopped basil.

  4. Add several cherry tomato halves.

  5. Fold the chicken closed.

  6. Secure with toothpicks if necessary.

Step 3 – Sear

  1. Heat olive oil in a large oven-safe skillet.

  2. Sear chicken for 3–4 minutes per side until golden brown.

Step 4 – Bake

  1. Transfer skillet to oven.

  2. Bake for 18–22 minutes.

  3. Chicken is done when internal temperature reaches 165°F (74°C).

Step 5 – Make the Balsamic Glaze

  1. While chicken bakes, combine balsamic vinegar, honey, and brown sugar in a small saucepan.

  2. Simmer over medium heat for 8–10 minutes.

  3. Reduce until thick and syrupy.

  4. Remove from heat and allow to cool slightly.

Step 6 – Assemble

  1. Let chicken rest for 5 minutes.

  2. Slice into thick rounds.

  3. Arrange on a serving platter.

  4. Drizzle generously with balsamic glaze.

  5. Garnish with fresh basil, cherry tomatoes, and parsley.
