Ingredients

For the Beef Patties

  • 500 g (1 lb) ground beef (80/20 for best flavor)

  • ¼ cup breadcrumbs

  • 1 large egg

  • 2 tablespoons milk

  • 1 small onion, finely minced

  • 2 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon dried thyme (optional)

  • 1 tablespoon olive oil (for cooking)

For the Mushroom Onion Gravy

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 1 medium onion, sliced

  • 200 g (7 oz) mushrooms, sliced

  • 2 tablespoons all-purpose flour

  • 2 cups beef broth

  • 1 teaspoon Worcestershire sauce

  • ½ teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

Instructions

Step 1: Prepare the Patties

  1. In a large bowl, combine ground beef, breadcrumbs, egg, milk, minced onion, garlic, Worcestershire sauce, salt, pepper, and thyme.

  2. Mix gently until just combined. Do not overmix.

  3. Form into 4 oval-shaped patties.

Step 2: Brown the Patties

  1. Heat olive oil in a large skillet over medium heat.

  2. Add patties and cook for 4–5 minutes per side until well browned.

  3. Remove patties from skillet and set aside (they will finish cooking in the gravy).

Step 3: Make the Gravy

  1. In the same skillet, add butter and olive oil if needed.

  2. Add sliced onions and cook for 3–4 minutes until softened.

  3. Add mushrooms and cook until browned and tender.

  4. Sprinkle flour over the vegetables and stir for 1–2 minutes to cook out the raw flour taste.

  5. Gradually pour in beef broth while stirring to prevent lumps.

  6. Add Worcestershire sauce, salt, and pepper.

  7. Simmer until gravy thickens.

Step 4: Simmer Together

  1. Return patties to the skillet.

  2. Spoon gravy over the top.

  3. Cover and simmer for 10–15 minutes until patties are fully cooked (internal temperature 75°C / 165°F) and tender.

Serving Suggestions

  • Serve over creamy mashed potatoes.

  • Pair with buttered egg noodles.

  • Add green beans or roasted carrots for balance.

Tips

  • Use freshly ground black pepper for better flavor.

  • For extra depth, add a splash of soy sauce or Dijon mustard to the gravy.

  • Let patties rest briefly before serving to retain juices.

Storage

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.

  • Reheat gently on the stovetop with a splash of broth to loosen the gravy.
