  • ¼ cup unsweetened cocoa powder

  • ¼ cup granulated sugar

  • 2 ¼ tsp active dry yeast (1 packet)

  • 1 tsp salt

  • ¾ cup warm milk (110°F / 43°C)

  • ¼ cup unsalted butter, melted

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 tbsp red food coloring

  • 1 tsp white vinegar

For the Cinnamon Filling

  • ½ cup brown sugar

  • 1 ½ tbsp ground cinnamon

  • ¼ cup unsalted butter, softened

For the Cream Cheese Glaze

  • 4 oz (115g) cream cheese, softened

  • 2 tbsp unsalted butter, softened

  • 1 cup powdered sugar

  • ½ tsp vanilla extract

  • 2–3 tbsp milk (to desired consistency)

👩‍🍳 Instructions

Step 1: Prepare the Dough

  1. In a large bowl, mix warm milk and yeast. Let sit 5–10 minutes until foamy.

  2. Add melted butter, sugar, egg, vanilla, red food coloring, and vinegar. Mix well.

  3. In another bowl, whisk flour, cocoa powder, and salt.

  4. Gradually add dry ingredients to wet ingredients and knead 8–10 minutes until smooth and elastic.

  5. Place dough in a greased bowl, cover, and let rise 1–1.5 hours until doubled.

Step 2: Prepare the Filling

  • Mix brown sugar and cinnamon.

  • Set softened butter aside for spreading.

Step 3: Shape the Rolls

  1. Roll dough into a 14x16-inch rectangle.

  2. Spread softened butter evenly.

  3. Sprinkle cinnamon-sugar mixture over the surface.

  4. Roll tightly from the long edge into a log.

  5. Cut into 9–12 equal slices.

  6. Place in a greased baking dish.

  7. Cover and let rise 30–45 minutes.

Step 4: Bake

  • Preheat oven to 350°F (175°C).

  • Bake 20–25 minutes until cooked through.

  • Cool slightly before glazing.

Step 5: Make the Glaze

  1. Beat cream cheese and butter until smooth.

  2. Add powdered sugar and vanilla.

  3. Add milk gradually until thick but pourable.

  4. Spread generously over warm rolls.

💡 Pro Tips

  • Don’t overbake — red velvet rolls should stay soft and tender.

  • For deeper flavor, let the shaped rolls rest overnight in the fridge and bake the next morning.

  • Sprinkle red velvet crumbs on top for a bakery-style finish.

🥰 Storage

  • Store covered at room temperature for 1 day.

  • Refrigerate up to 4 days.

  • Reheat 15–20 seconds in microwave before serving.
