
Protein-Packed Breakfast Bowl π

π Ingredients:

2 eggs, scrambled

½ cup sweet potatoes, sliced

½ avocado, sliced
-
1 turkey sausage, sliced
-
½ cup fresh spinach
-
1 tbsp olive oil
-
½ tsp salt
-
½ tsp black pepper
-
¼ tsp chili flakes (optional)

Cook the Sweet Potatoes:

Heat ½ tbsp of olive oil in a skillet over medium heat.

Add sliced sweet potatoes and a pinch of salt and pepper.

Cook for 8–10 minutes, flipping occasionally, until golden and tender. Remove from skillet and set aside.

Cook the Turkey Sausage:
-
In the same skillet, add the sliced turkey sausage.
-
Sauté for 4–5 minutes until browned and cooked through. Remove and set aside.

Sauté the Spinach:
-
Add remaining ½ tbsp olive oil to the skillet.

Toss in the spinach and cook for 1–2 minutes until just wilted. Remove from heat.

Scramble the Eggs:

In a small bowl, whisk the eggs with a pinch of salt and pepper.

Pour into a clean non-stick pan over low-medium heat.

Stir gently and cook until just set.

Assemble the Bowl:

In a serving bowl, layer in the sweet potatoes, scrambled eggs, turkey sausage, sautéed spinach, and sliced avocado.

Sprinkle with black pepper and chili flakes (if using) for a little extra kick.
