Protein-Packed Breakfast Bowl 🍠


πŸ“ Ingredients:

  • 2 eggs, scrambled

  • ½ cup sweet potatoes, sliced

  • ½ avocado, sliced

  • 1 turkey sausage, sliced

  • ½ cup fresh spinach

  • 1 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • ¼ tsp chili flakes (optional)

  1. Cook the Sweet Potatoes:

    • Heat ½ tbsp of olive oil in a skillet over medium heat.

    • Add sliced sweet potatoes and a pinch of salt and pepper.

    • Cook for 8–10 minutes, flipping occasionally, until golden and tender. Remove from skillet and set aside.

  2. Cook the Turkey Sausage:

    • In the same skillet, add the sliced turkey sausage.

    • Sauté for 4–5 minutes until browned and cooked through. Remove and set aside.

  3. Sauté the Spinach:

    • Add remaining ½ tbsp olive oil to the skillet.

    • Toss in the spinach and cook for 1–2 minutes until just wilted. Remove from heat.

  4. Scramble the Eggs:

    • In a small bowl, whisk the eggs with a pinch of salt and pepper.

    • Pour into a clean non-stick pan over low-medium heat.

    • Stir gently and cook until just set.

  5. Assemble the Bowl:

    • In a serving bowl, layer in the sweet potatoes, scrambled eggs, turkey sausage, sautéed spinach, and sliced avocado.

    • Sprinkle with black pepper and chili flakes (if using) for a little extra kick.
