Ingredients

For the Crust

  • 1 ½ cups crushed digestive biscuits or graham crackers
  • 5 tbsp (70g) unsalted butter, melted

For the Cream Cheese Layer

  • 400g (14 oz) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (cold)

For the Peach Layer

  • 1 ½ cups peach puree (from ripe or canned peaches)
  • ¼ cup granulated sugar (adjust to taste)
  • 1 tbsp lemon juice
  • 1 tsp gelatin + 2 tbsp water

For the Topping

  • Fresh peach slices (or canned peaches, well-drained)
  • Peach syrup or puree (for drizzling)
  • Mint leaves (optional)

Instructions

Step 1: Prepare the Crust

  1. In a bowl, mix crushed biscuits with melted butter until evenly combined.
  2. Press firmly into the bottom of a square or rectangular pan.
  3. Refrigerate for 20–30 minutes until set.

Step 2: Make the Cream Layer

  1. Beat cream cheese, powdered sugar, and vanilla until smooth and creamy.
  2. In a separate bowl, whip heavy cream to soft peaks.
  3. Gently fold whipped cream into the cream cheese mixture.
  4. Spread evenly over the chilled crust.
  5. Chill for 30 minutes to firm up slightly.

Step 3: Prepare the Peach Layer

  1. Sprinkle gelatin over water and let it bloom for 5 minutes.
  2. In a saucepan, gently heat peach puree, sugar, and lemon juice (do not boil).
  3. Add the bloomed gelatin and stir until fully dissolved.
  4. Let the mixture cool to room temperature.

Step 4: Assemble

  1. Pour the cooled peach mixture over the cream layer.
  2. Smooth the surface gently.
  3. Refrigerate for 3–4 hours (or overnight) until fully set.

Step 5: Decorate

  1. Arrange peach slices neatly on top.
  2. Drizzle peach syrup or puree for a glossy finish.
  3. Garnish with mint leaves if desired.
