Ingredients

For the Chocolate Crust

  • 200g (7 oz) chocolate cookies (Oreos without filling or similar)
  • 80g (5 tbsp) unsalted butter, melted

For the Cheesecake Filling

  • 500g (18 oz) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup heavy cream
  • 100g (3.5 oz) dark chocolate, melted and slightly cooled

For the Cherry Topping

  • 1 ½ cups cherries (fresh or frozen, pitted)
  • ⅓ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • ¼ cup water

For Decoration (Optional)

  • Fresh cherries

  • Powdered sugar

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 170°C (340°F).
  2. Crush chocolate cookies into fine crumbs.
  3. Mix with melted butter until evenly combined.
  4. Press firmly into the bottom of a springform pan.
  5. Bake for 8–10 minutes, then let cool.

Step 2: Make the Cheesecake Filling

  1. Beat cream cheese and sugar until smooth and creamy.
  2. Add eggs one at a time, mixing gently after each addition.
  3. Stir in vanilla and heavy cream.
  4. Add melted dark chocolate and mix until fully incorporated.

  1. Pour filling over the cooled crust.
  2. Bake for 45–55 minutes until edges are set but center is slightly jiggly.
  3. Turn off oven, leave door slightly open, and let cake cool inside for 1 hour.
  4. Refrigerate for at least 4 hours or overnight.

Step 4: Make the Cherry Topping

  1. In a saucepan, combine cherries, sugar, lemon juice, and water.
  2. Cook over medium heat until cherries soften (5–7 minutes).
  3. Mix cornstarch with a little water, then stir into the sauce.
  4. Cook until thick and glossy.
  5. Let cool completely.

Step 5: Assemble

  1. Spoon cherry topping over chilled cheesecake.
  2. Let it drip naturally over the edges for that dramatic look.

Step 6: Decorate

  • Add fresh cherries and chocolate pieces on top.
  • Lightly dust with powdered sugar if desired.
