Ingredients

For the Cupcake Batter

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt

  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract

For the Cream Cheese Filling

  • 200g (7 oz) cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

For the Purple Frosting (Ube / Blueberry Style)

  • 200g (7 oz) butter, softened
  • 2 cups powdered sugar
  • 2–3 tbsp ube puree or blueberry puree
  • 1–2 tbsp milk
  • ½ tsp vanilla extract

For Decoration

  • Fresh blueberries
  • Lime zest (optional, for contrast and freshness)

Instructions

Step 1: Make the Blueberry Filling

  1. In a saucepan, combine blueberries, sugar, lemon juice, and cornstarch.
  2. Cook over medium heat for 5–7 minutes until thick and jam-like.
  3. Let cool completely.

Step 2: Prepare the Cupcake Batter

  1. Preheat oven to 180°C (350°F) and line a cupcake tray.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla.
  5. Alternate adding dry ingredients and milk, mixing until smooth.

Step 3: Bake

  1. Fill cupcake liners about ⅔ full.
  2. Bake for 18–22 minutes until a toothpick comes out clean.
  3. Let cool completely.

Step 4: Fill the Cupcakes

  1. Cut a small hole in the center of each cupcake.
  2. Add a spoon of cream cheese filling.
  3. Add a layer of blueberry filling on top.

Step 5: Make the Frosting

  1. Beat butter until creamy.
  2. Gradually add powdered sugar.
  3. Add ube or blueberry puree, milk, and vanilla.
  4. Beat until smooth and fluffy.

Step 6: Decorate

  1. Pipe frosting generously on top.
  2. Garnish with fresh blueberries and a sprinkle of lime zest.
