๐ค Pineapple Chili Shrimp (Sweet, Tangy & Spicy)

๐งพ Ingredients (Serves 2โ3)
For the shrimp:
- 400g (14 oz) shrimp, peeled & deveined
- Salt & black pepper
- 1 tablespoon olive oil
For the sauce:
- 1 cup pineapple chunks (fresh or canned)
- ยฝ cup pineapple juice
- 2 tablespoons soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar or lime juice
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1โ2 teaspoons chili flakes or chili sauce ๐ถ๏ธ
- 1 tablespoon cornstarch + 2 tbsp water (slurry)
๐ฉโ๐ณ Instructions

1. Sear the shrimp
Season shrimp with salt and pepper.
Heat oil in a pan over medium-high heat.
Cook shrimp for 1โ2 minutes per side until pink and slightly golden.
Remove and set aside.
2. Build the sauce
In the same pan, sautรฉ garlic and ginger until fragrant.
Add pineapple chunks + juice, soy sauce, honey, vinegar, and chili.
Simmer for 2โ3 minutes.
3. Thicken
Add cornstarch slurry โ stir until the sauce becomes glossy and slightly thick.
4. Combine
Return shrimp to the pan.
Toss everything together for 1โ2 minutes until coated and heated through.
5. Garnish & serve
Top with chopped parsley or green onions.

- Want extra caramelization โ lightly sear pineapple before adding sauce
