Ingredients

For the Brie

  • 1 wheel of brie cheese (200–250g / 7–9 oz)
  • 1 tbsp olive oil or honey

For the Cranberry Sauce

  • 1 cup fresh or frozen cranberries
  • ¼ cup sugar
  • 2 tbsp orange juice (or water)
  • 1 tsp lemon juice
  • Pinch of salt

For Garnish

  • Fresh rosemary sprigs
  • Extra cranberries (optional)
  • Crackers or toasted bread (for serving)

Step 1: Prepare the Cranberry Sauce

  1. In a saucepan, combine cranberries, sugar, orange juice, lemon juice, and salt.
  2. Cook over medium heat for 5–7 minutes until cranberries burst and sauce thickens.
  3. Stir occasionally and lightly mash for texture.
  4. Let cool slightly.

Step 2: Prepare the Brie

  1. Preheat oven to 180°C (350°F).
  2. Place brie on a baking dish lined with parchment paper.
  3. Lightly score the top rind (optional, helps sauce soak in).
  4. Drizzle a little olive oil or honey on top.

Step 3: Bake

  • Bake for 12–15 minutes until the cheese is soft and melty inside.

Step 4: Assemble

  1. Spoon warm cranberry sauce generously over the baked brie.
  2. Let it drip naturally over the sides.

Step 5: Garnish & Serve

  • Add fresh rosemary sprigs for aroma and presentation
  • Serve immediately with crackers, bread, or crostini
