Ingredients

For the Base Layer

  • 1 ½ cups crushed biscuits or graham crackers
  • 5 tbsp (70g) unsalted butter, melted

For the Cream Layer

  • 400g (14 oz) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (cold)

For the Berry Filling

  • 1 ½ cups mixed berries (strawberries, raspberries, blueberries)
  • ⅓ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • ¼ cup water

For the Crumble Topping

  • 1 cup crushed biscuits or cake crumbs
  • 2 tbsp melted butter

For Decoration

  • Fresh berries
  • Powdered sugar (for dusting)
  • Mint or decorative greenery (optional)

Step 1: Prepare the Base

  1. Mix crushed biscuits with melted butter.
  2. Press firmly into a square pan.
  3. Chill for 20–30 minutes until set.

Step 2: Make the Cream Layer

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Whip heavy cream to soft peaks.
  3. Fold whipped cream into cream cheese mixture.
  4. Spread evenly over the base.
  5. Chill for 30 minutes.

Step 3: Cook the Berry Filling

  1. In a saucepan, combine berries, sugar, lemon juice, and water.
  2. Cook over medium heat until berries soften.
  3. Add cornstarch slurry and cook until thick and glossy.
  4. Let cool completely.

Step 4: Assemble Layers

  1. Spread berry filling over the chilled cream layer.
  2. Sprinkle crumble topping evenly on top.
  3. Chill for 2–3 hours until firm.

Step 5: Cut & Decorate

  1. Cut into neat squares.
  2. Pipe or spoon a little cream on top.
  3. Add fresh berries and dust with powdered sugar.
