
Make Your Own Homemade Butter in Just 5 Minutes

- Ice water
- A spatula

Instructions
1. Prepare the Cream
Pour cold heavy cream into your food processor, blender, or bowl (if using an electric mixer). Make sure the cream is very cold, as this will yield the best results. You can use anywhere from one cup to a quart of cream, depending on how much butter you want to make.
2. Start Churning
Begin to process or beat the cream on a medium to high setting. At first, it will turn into whipped cream with soft, then stiff peaks. Keep going past this stage. After a few minutes, the cream will break down further, and you will start to see the fat separating from the liquid.
3. Watch for Separation
Continue mixing until you see the butter clumping together and separating from the buttermilk (a thin, watery liquid). This usually takes about 3 to 5 minutes of churning after reaching the whipped cream stage.
4. Drain the Buttermilk
Once the butter has formed, pour off the buttermilk. You can save it for baking recipes like pancakes or scones.
5. Wash the Butter
To wash the butter, put the butter clumps into a bowl and pour ice water over them. Gently press the butter with a spatula or wooden spoon to squeeze out more buttermilk. Drain the water and repeat this process until the water runs clear. Washing the butter removes any remaining buttermilk, which, if left in, can spoil the butter.
6. Salt (Optional)
If you prefer salted butter, now is the time to add some salt. Start with a pinch, mix well, and taste. Add more salt as needed.
7. Shape and Store
Once your butter is washed, you can shape it into a ball or a block, or use molds to create decorative shapes. Wrap it in parchment paper or place it in an airtight container. Store your homemade butter in the refrigerator or freezer.
