🐟 Crispy Salmon Croquettes with Lemon Herb Cream Sauce

I. INGREDIENTS

🐟 Salmon Croquettes

  • 400 g (14 oz) cooked salmon (fresh or canned, drained & flaked)

  • 1 small onion, finely minced

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon fresh dill (optional)

  • 1 teaspoon Dijon mustard

  • 1 teaspoon lemon zest

  • 1 tablespoon lemon juice

  • 1 egg

  • ½ cup (60 g) breadcrumbs (plus extra for coating)

  • ¼ cup (30 g) grated Parmesan (optional)

  • Salt & black pepper

  • Oil for shallow frying

  • ½ cup (120 ml) sour cream or Greek yogurt

  • 2 tablespoons mayonnaise

  • 1 tablespoon lemon juice

  • 1 tablespoon fresh dill, finely chopped

  • 1 tablespoon parsley, chopped

  • 1 small garlic clove, grated

  • Salt & white pepper

Optional: 1–2 tablespoons olive oil for smoother texture.


II. MAKING THE CROQUETTES

1️⃣ Mix the Filling

In a bowl combine:

  • Flaked salmon

  • Onion

  • Herbs

  • Dijon

  • Lemon zest & juice

  • Egg

  • Breadcrumbs

  • Parmesan

  • Salt & pepper

Mix gently — do not overwork.

Texture should hold shape but remain moist.


2️⃣ Shape & Chill

Form into small thick cubes or round patties.

Coat lightly in extra breadcrumbs for crisp exterior.

Refrigerate 30 minutes (this prevents breaking while frying).


III. FRYING (Perfect Golden Crust)

Heat oil in a skillet over medium heat.

Fry 3–4 minutes per side until:
βœ” Deep golden brown
βœ” Crispy outside
βœ” Heated through

Drain on paper towels.


IV. MAKING THE HERB SAUCE

Whisk together:

  • Sour cream

  • Mayo

  • Lemon juice

  • Garlic

  • Dill & parsley

  • Salt & white pepper

Chill at least 15 minutes for flavors to develop.


V. PLATING (Restaurant Style)

• Spoon herb sauce onto plate.
• Place croquettes on top.
• Drizzle extra sauce over.
• Garnish with fresh herbs & cracked pepper.


VI. PRO CHEF TIPS

βœ” Use cold mixture for clean shaping.
βœ” Do not overcrowd the pan.
βœ” Medium heat = crispy outside without burning.
βœ” Add a small cube of cold butter to oil for richer flavor.
βœ” For extra crunch → use panko breadcrumbs.
