Ingredients (Serves 6–8)

  • 200 g all-purpose flour
  • 3 large eggs
  • 100 ml milk
  • 100 ml olive oil
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Filling:

  • 150 g sausage or chorizo (cubed or sliced)
  • 100 g cheese (gruyère, cheddar, or mozzarella), diced
  • 100 g green olives (pitted, sliced)

Optional:

  • 2 tbsp chopped chives or parsley
  • Cherry tomatoes (for topping)

Instructions

1. Prepare the batter

  • Preheat oven to 180°C (350°F)
  • In a bowl, whisk eggs, milk, and olive oil
  • Add flour, baking powder, salt, and pepper
  • Mix until smooth

2. Add the filling

  • Fold in sausage, cheese, and olives
  • Add herbs if using
  • Mix gently to distribute evenly

3. Bake

  • Pour batter into a greased loaf pan
  • Add cherry tomatoes on top if desired
  • Bake for 40–45 minutes
  • Insert a toothpick → should come out clean

4. Cool and serve

  • Let cool for 10–15 minutes
  • Slice and serve warm or at room temperature
