Creamy Garlic Shrimp & Scallops Puff Pastry Stack

Ingredients (Serves 2)
For the puff pastry:
- 2 sheets or squares of puff pastry (thawed if frozen)
- 1 egg (for egg wash)
For the seafood:
- 6–8 large shrimp, peeled and deveined
- 6–8 sea scallops (side muscle removed)
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
For the creamy garlic mushroom sauce:
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup mushrooms, sliced
- 1/2 cup heavy cream
- 1/4 cup white wine (optional)
- 1/4 cup chicken or seafood stock
- 1 tablespoon grated Parmesan cheese
- Salt and black pepper to taste
- Fresh thyme or parsley for garnish
Instructions

1. Prepare and bake the puff pastry
- Preheat the oven to 200°C (400°F)
- Place puff pastry on a lined baking sheet
- Brush lightly with egg wash
- Bake for 12–15 minutes until golden and puffed
- Remove and let cool slightly
2. Sear the seafood
- Pat shrimp and scallops completely dry
- Season with salt and pepper
- Heat a skillet over medium-high heat
- Add olive oil and butter
- Sear scallops first for 1.5–2 minutes per side until golden brown
- Remove and set aside
- Sear shrimp for about 1 minute per side until pink and just cooked
- Remove and set aside
3. Make the creamy garlic mushroom sauce
- In the same pan, melt butter over medium heat
- Add garlic and sauté for 20–30 seconds
- Add mushrooms and cook until softened
- Pour in white wine (if using) and let it reduce for 1–2 minutes
- Add heavy cream and stock
- Simmer gently until slightly thickened
- Stir in Parmesan cheese
- Season with salt and pepper
- Add fresh thyme
4. Assemble the dish
- Place puff pastry on a serving plate
- Spoon creamy mushroom sauce over the pastry
- Arrange shrimp and scallops on top
- Drizzle additional sauce over the seafood
- Garnish with fresh herbs
