🍫 Molten Chocolate Lava Cake

🧾 Ingredients (Serves 3–4)

  • 120g (4 oz) dark chocolate (60–70%)

  • 100g (1/2 cup) unsalted butter

  • 2 large eggs

  • 2 egg yolks

  • 100g (1/2 cup) granulated sugar

  • 1 tsp vanilla extract

  • 40g (1/3 cup) all-purpose flour

  • Pinch of salt

1. Prep

  1. Preheat oven to 200°C (390°F).

  2. Grease ramekins with butter and lightly dust with cocoa powder or flour.


2. Melt Chocolate

  1. In a heatproof bowl, melt chocolate and butter together (microwave or double boiler).

  2. Stir until smooth and glossy. Let cool slightly.


3. Mix Batter

  1. In another bowl, whisk eggs, egg yolks, and sugar until thick and pale.

  2. Add vanilla extract.

  3. Slowly fold in melted chocolate mixture.

  4. Sift in flour and salt, gently mix until smooth (do not overmix).


4. Bake

  1. Divide batter evenly into ramekins (about 3/4 full).

  2. Bake for 10–12 minutes:

    • Edges should be set

    • Center should remain soft and slightly jiggly


5. Serve

  1. Let rest for 1–2 minutes.

  2. Serve directly in ramekin or invert onto a plate.

  3. Spoon into the center to reveal the molten chocolate core.

  • Do NOT overbake (most important).

  • Use high-quality dark chocolate for rich flavor.

  • Chill batter for 30 mins before baking for a thicker lava center.
