Cream Filling

200 g cream cheese (softened)

50 g powdered sugar

1 tsp vanilla extract
Cherry Topping
-
200 g cherries (fresh or frozen, pitted)

2 tbsp sugar
-
1 tbsp lemon juice
-
1 tsp cornstarch + 2 tbsp water
Instructions

Step 1: Make Cherry Compote

Cook cherries + sugar + lemon juice over medium heat

Simmer until soft

Add cornstarch slurry
-
Cook until thick and glossy
-
Cool completely
Step 2: Make Cookies

Melt chocolate + butter together
-
Whisk in sugar
-
Add eggs + vanilla
-
Mix in flour, cocoa, baking powder, salt
-
Chill dough 15–20 minutes
Step 3: Bake

Preheat oven to 180°C (350°F)
-
Scoop dough onto tray
-
Bake 10–12 minutes

Beat cream cheese + powdered sugar + vanilla until smooth
Step 5: Assemble

Spread cream on one cookie
