Cheesecake Layer:
- 250 g cream cheese (room temp)
- 70 g sugar
- 1 egg
- 100 ml heavy cream
- 100 g blackberry puree
- 1 tsp lemon juice
Blackberry Sauce:
- 150 g blackberries
- 50 g sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch + 2 tbsp water
Topping:
- Fresh blackberries
- Lime zest (optional)

Step 1: Make Cake Base
- Mix egg + sugar until light
- Add milk + melted butter + vanilla
- Fold in flour + baking powder
- Pour into cupcake liners (fill ~1/3)
๐ Bake at 170ยฐC for 8โ10 mins (slightly set, not fully baked)
Step 2: Cheesecake Layer
- Beat cream cheese + sugar until smooth
- Add egg โ mix gently
- Add cream + blackberry puree + lemon juice
- Pour over cake base
๐ Bake at 160ยฐC for 15โ18 mins
๐ Center should still slightly jiggle
Step 3: Chill
- Cool completely โ refrigerate at least 2 hours

Step 4: Make Sauce
- Cook blackberries + sugar + lemon juice
- Mash + simmer
- Add cornstarch slurry โ thicken
- Cool down
