These vegetarian burgers are packed with protein, fiber, and flavor, making them a perfect healthy and delicious meal. They're crispy on the outside, soft on the inside, and can be enjoyed in a bun, with a salad, or as a side dish.

Ingredients:

  • 1 cup cooked lentils (well-drained)

  • 2 cups fresh spinach (chopped)

  • ½ onion, finely chopped

  • 1 garlic clove, minced

  • ½ cup breadcrumbs

  • ¼ cup oats

  • 1 egg (optional, helps bind the mixture)

  • 1 teaspoon ground cumin

  • Salt and pepper to taste

  • Olive oil (for cooking)

Instructions:

1๏ธโƒฃ Cook the Vegetables

  1. Heat 1 tablespoon of olive oil in a pan over medium heat.

  2. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.

  3. Add the chopped spinach and cook for another 2 minutes until wilted.

  4. Remove from heat and let it cool slightly.

2๏ธโƒฃ Prepare the Burger Mixture

  1. In a large bowl, mash the cooked lentils with a fork or potato masher until mostly smooth (a few chunks are okay for texture).

  2. Add the sautéed spinach mixture, breadcrumbs, oats, ground cumin, salt, and pepper.

  3. If using, add the egg and mix well to combine.

  4. If the mixture is too wet, add more breadcrumbs or oats until it reaches a firm consistency that holds its shape.

3๏ธโƒฃ Shape the Burgers

  1. Take a portion of the mixture and form patties with your hands (about 2.5 inches in diameter).

  2. Place them on a plate and let them rest for 10 minutes in the fridge to firm up.

4๏ธโƒฃ Cook the Burgers

  1. Heat a little olive oil in a non-stick pan over medium heat.

  2. Cook the burgers for 3-4 minutes per side, or until golden brown and crispy.

  3. Remove from heat and let them rest for a minute before serving.
