Peach Crumble Muffins
Ingredients (12 muffins)
2 cups (250 g) all-purpose flour
1/2 cup (100 g) granulated sugar
1/4 cup (50 g) brown sugar
1/2 cup (115 g) melted butter
1 1/2 cups fresh peaches (peeled and diced)
Crumble (Streusel) Topping
1/2 cup (60 g) all-purpose flour
1/3 cup (65 g) brown sugar
1/4 cup (55 g) cold butter (cubed)
1/2 tsp cinnamon (optional)
Preheat oven to 190°C (375°F).
Line a 12-cup muffin tin with paper liners.
Step 2: Make the Crumble Topping
Use a fork or fingers to mix until crumbly.
Refrigerate until ready to use.
Step 3: Make the Muffin Batter
Pour the wet ingredients into the dry ingredients.
Mix gently until just combined.
Step 4: Fill the Muffin Cups
Fill muffin liners about 3/4 full with batter.
Place a few peach slices on top for extra flavor.
Sprinkle the crumble topping generously over each muffin.
Bake for 18–22 minutes until:
a toothpick comes out clean.
Let muffins cool for 10 minutes.
Serve warm for the best flavor.
Use ripe peaches for sweeter muffins.
Frozen peaches also work (thaw and drain first).
Add 1/4 tsp almond extract for a bakery-style flavor.
