🥝 Kiwi Panna Cotta (Creamy & Elegant Layered Dessert)

🛒 INGREDIENTS

1️⃣ Vanilla Panna Cotta Layer

  • 2 cups (480 ml) heavy cream

  • ½ cup (100 g) granulated sugar

  • 1 teaspoon vanilla extract

  • 2 ½ teaspoons powdered gelatin

  • 3 tablespoons cold water


2️⃣ Kiwi Topping Layer

  • 3–4 ripe kiwis, peeled and chopped

  • 2 tablespoons sugar (adjust to taste)

  • 1 teaspoon lemon juice

  • 1 teaspoon gelatin

  • 2 tablespoons cold water


👩‍🍳 INSTRUCTIONS


Step 1: Bloom the Gelatin (Panna Cotta Layer)

  1. Sprinkle 2 ½ teaspoons gelatin over 3 tablespoons cold water.

  2. Let sit 5–10 minutes until spongy.


Step 2: Heat the Cream

  1. In a saucepan, combine heavy cream and sugar.

  2. Heat over medium-low until sugar dissolves (do not boil).

  3. Remove from heat and stir in vanilla.

  4. Add bloomed gelatin and stir until fully dissolved.


Step 3: Pour & Chill

  1. Pour mixture evenly into serving glasses.

  2. Let cool slightly at room temperature.

  3. Refrigerate at least 4 hours until fully set.


Step 4: Prepare Kiwi Layer

⚠ Important: Fresh kiwi contains enzymes that prevent gelatin from setting if not heated.

  1. Blend chopped kiwi with sugar and lemon juice.

  2. Pour into a small saucepan and simmer 2–3 minutes to deactivate enzymes.

  3. Bloom 1 teaspoon gelatin in 2 tablespoons cold water for 5 minutes.

  4. Stir bloomed gelatin into warm kiwi mixture until dissolved.

  5. Let mixture cool to room temperature (not hot).


Step 5: Add Kiwi Layer

  1. Once panna cotta is fully set, gently spoon kiwi mixture on top.

  2. Refrigerate another 1–2 hours until top layer sets.


Step 6: Garnish

Top with:

  • Fresh kiwi cubes

  • Mint leaves (optional)

  • White chocolate shavings (optional)

  • Do not boil cream — it affects texture.

  • Let kiwi layer cool before pouring or it will melt the panna cotta.

  • For clean layers, pour slowly over the back of a spoon.

  • Chill overnight for best texture.
