Filling:
- 200 g shrimp (peeled, deveined, finely chopped)
- 100 g mozzarella cheese (shredded or cut into small sticks)
- 2 tbsp cream cheese (optional, for extra creaminess)
- 2 cloves garlic (minced)
- 1 tbsp green onions (chopped)
- 1 tsp soy sauce
- ½ tsp black pepper
- ½ tsp paprika or chili flakes (optional)
Wrappers:
- 10–12 spring roll wrappers
For Sealing:
- 1 egg (beaten) or flour + water paste
For Frying:
- Oil (for deep frying)

1. Prepare the filling
In a bowl, combine chopped shrimp, garlic, soy sauce, pepper, and green onions.
Mix well until slightly sticky.
Fold in mozzarella and cream cheese.
2. Wrap the rolls
Place a wrapper on a flat surface (diamond shape).
Add 2 tablespoons of filling near the bottom corner.
Roll tightly halfway, fold in the sides, then continue rolling.
Seal the edge with egg wash or flour paste.
3. Heat the oil
Heat oil to about 170–180°C (340–350°F).
Make sure oil is hot enough for crispiness but not too hot to burn.
4. Fry the rolls
Fry in batches for 3–4 minutes until golden brown and crispy.
Turn occasionally for even cooking.
Remove and drain on paper towels.
5. Serve
Garnish with chopped green onions.
Serve hot with dipping sauce (sweet chili sauce, soy sauce, or spicy mayo).
