Ingredients
Chicken Layer
- 2 large chicken breasts (butterflied or pounded thin)
- Salt & black pepper
Breading
- 1 cup breadcrumbs (panko preferred)
- ½ cup flour
- 2 eggs (beaten)
- ½ cup grated parmesan
Filling
- 2 cups red cabbage (thinly sliced)
- 1 small onion (sliced)
- 1 tbsp sugar
- 2 tbsp vinegar (apple cider or balsamic)
- 1 tbsp butter
Cheese Layer
- 150g mozzarella or gouda (shredded)
Extra
- 2 tbsp olive oil or butter (for frying)
- Fresh parsley (for garnish)
Instructions

Step 1: Cook the Red Cabbage
- Melt butter in a pan
- Add onion → sauté until soft
- Add cabbage + sugar + vinegar
- Cook 10–15 mins until soft & slightly caramelized

Step 2: Bread the Chicken
- Season chicken
- Coat in flour → egg → breadcrumb + parmesan
Step 3: Fry for Crispiness
- Heat oil in pan
- Fry chicken until golden (not fully cooked inside is fine)

Step 4: Assemble Layers
In a baking dish:
- Crispy chicken
- Red cabbage
- Cheese
Repeat layers
Step 5: Bake
- Bake at 180°C (350°F) for 20–25 minutes
