Ingredients

Chicken Layer

  • 2 large chicken breasts (butterflied or pounded thin)
  • Salt & black pepper

Breading

  • 1 cup breadcrumbs (panko preferred)
  • ½ cup flour
  • 2 eggs (beaten)
  • ½ cup grated parmesan

Filling

  • 2 cups red cabbage (thinly sliced)
  • 1 small onion (sliced)
  • 1 tbsp sugar
  • 2 tbsp vinegar (apple cider or balsamic)
  • 1 tbsp butter

Cheese Layer

  • 150g mozzarella or gouda (shredded)

Extra

  • 2 tbsp olive oil or butter (for frying)
  • Fresh parsley (for garnish)

Instructions

Step 1: Cook the Red Cabbage

  • Melt butter in a pan
  • Add onion → sauté until soft
  • Add cabbage + sugar + vinegar
  • Cook 10–15 mins until soft & slightly caramelized

👉 You want sweet + tangy balance

Step 2: Bread the Chicken

  • Season chicken
  • Coat in flour → egg → breadcrumb + parmesan

Step 3: Fry for Crispiness

  • Heat oil in pan
  • Fry chicken until golden (not fully cooked inside is fine)

👉 This gives that crunchy outer layer

Step 4: Assemble Layers

In a baking dish:

  1. Crispy chicken
  2. Red cabbage
  3. Cheese

Repeat layers

Step 5: Bake

  • Bake at 180°C (350°F) for 20–25 minutes
  • Until cheese melts and everything is cooked through

Step 6: Finish

  • Sprinkle parsley
  • Let rest 5 minutes before cutting
