Instructions:
Step 1: Preheat the Oven
Preheat the oven to 400°F (200°C).

Using a sharp knife, cut a pocket into each chicken breast, taking care not to cut all the way through.
Season the chicken breasts with salt and pepper, inside and out, for flavor.
Step 3: Cook the Mushrooms
Add 1 tablespoon olive oil to a large skillet and heat over medium-high heat.
Add in 1 tablespoon of butter and allow to melt.
Toss the sliced mushrooms into the skillet. Cook for about 5-7 minutes (stirring now and then) until the mushrooms are golden brown and tender.

Take the skillet off the heat and let the mixture cool briefly.
